We are starting to prepare our Jerusalem artichoke in the Kitchen Garden, ready for harvesting. As the stems have now died back we can cut them to the ground, leaving the tubers in the ground. We keep them in situ until the Kitchen needs them, this is the perfect environment for storing.
They are a giant member of the Sunflower family, towering up to 3m into the air. Once the tubers are in the ground they spread quickly, but the lovely nutty flavour they bring to the kitchen in the winter is something to treasure.
