Autumn harvest is now at its climax with our crop of squashes. These vegetables used to be quite unusual in the kitchen but now it has become one of Head Chef Georges staples. After several years of trialing, George has selected four varieties: Hunter, Hurricane, Autumn Crown and Crown Prince. These are all wonderful varieties with their own characteristics. They all have different storage capacities, Hunter and Hurricane are butternut squashes and have thinner skins so get used first. Head Chef George’s favourite squash is Crown Prince. The reason he loves it so much is that it has a very low water content, which makes it easier to get flavour from. It also stores very well with its thick turquoise skin.
